Description

A delightful blend of grilled zucchini, creamy goat cheese, fresh basil, and a drizzle of honey, perfect for summer.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt + pepper, to taste

Instructions

  1. Start by removing the ends from the zucchinis and slicing them into 1/2-inch pieces, lengthwise.
  2. Arrange the sliced zucchini on a plate or cutting board, applying salt liberally and set aside for about 20 minutes.
  3. Pat the zucchini slices dry with a clean cloth or paper towel.
  4. Heat your grill or grill pan to medium-high.
  5. Brush both sides of each zucchini slice with olive oil or avocado oil.
  6. Place the zucchini slices onto the grill, cooking for 10-15 minutes, flipping halfway through.
  7. Serve the zucchini on a large plate, sprinkle with goat cheese and basil, drizzle with honey, and season with salt and pepper to taste.

Notes

Feel free to customize with nuts or zesty lemon. Use feta cheese as an alternative to goat cheese.
