- 1 pound ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 2 tablespoons olive oil
- Optional toppings: green onions or fresh herbs
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cooking until soft and fragrant.
- Add ground turkey, paprika, salt, and pepper to the skillet. Sauté until the turkey is browned and cooked through, about 5-7 minutes.
- Layer the diced sweet potatoes at the bottom of a large baking dish.
- Pour the cooked turkey mixture evenly over the sweet potatoes.
- Drizzle the chicken broth over the casserole.
- Sprinkle shredded cheese generously on top.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until sweet potatoes are tender and cheese is bubbly.
- Allow the casserole to cool slightly before serving and garnish with green onions or fresh herbs if desired.
