Description

A comforting and nutritious bowl filled with seasoned chicken, fresh corn, avocado, and spices, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb chicken breast
  • 2 cups corn (fresh or canned)
  • 1 red bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked brown rice or quinoa
  • Cilantro for garnish (optional)

Instructions

  1. In a skillet over medium heat, cook the chicken breast until browned and cooked through, about 6-7 minutes per side. Season with chili powder, cumin, salt, and pepper to enhance the flavors.
  2. In a separate bowl, combine cooked corn, black beans, diced bell pepper, and lime juice. Stir gently to mix, allowing the flavors to meld.
  3. Serve the cooked chicken over a bed of warm brown rice or quinoa, then top generously with the corn mixture for a refreshing crunch.
  4. Finish it off by adding sliced avocado on top and garnishing with fresh cilantro if desired, for an extra burst of color and flavor.

Notes

Make-Ahead Magic: Cook the chicken and prepare the corn mixture a day ahead. Store separately in the fridge.
