Ingredients

  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1/2 cup unsweetened applesauce

  • 1/2 teaspoon baking powder

  • 1/2 cup mix-ins (like nuts or chocolate chips)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the almond flour, protein powder, baking soda, baking powder, and salt in a bowl.
  3. Whisk together the eggs, honey (or maple syrup), and applesauce until smooth and creamy in another bowl.
  4. Mix the wet ingredients into the dry ingredients until well combined, creating a tender batter.

  6. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
