Description

A quick and delicious dinner of tender chicken, sweet potatoes, and green beans, all infused with a honey garlic marinade.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  2. Marinate the chicken in this mixture for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Preheat your oven to 400°F (200°C).
  4. Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper.
  5. Roast the sweet potatoes in the preheated oven for about 15 minutes.
  6. Remove the baking sheet and push the sweet potatoes to one side.
  7. Place the marinated chicken on the other side and arrange the green beans around them.
  8. Drizzle the remaining marinade over everything.
  9. Bake for 20-25 minutes or until the chicken reaches 165°F (75°C) and the sweet potatoes are tender.

Notes

Make-ahead: Prepare the marinade the night before and marinate the chicken for deeper flavor. Can swap sweet potatoes for regular potatoes or butternut squash.
