Description
A quick and delicious dinner of tender chicken, sweet potatoes, and green beans, all infused with a honey garlic marinade.

- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
- Marinate the chicken in this mixture for at least 30 minutes or up to 8 hours in the refrigerator.
- Preheat your oven to 400°F (200°C).
- Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast the sweet potatoes in the preheated oven for about 15 minutes.
- Remove the baking sheet and push the sweet potatoes to one side.
- Place the marinated chicken on the other side and arrange the green beans around them.
- Drizzle the remaining marinade over everything.
- Bake for 20-25 minutes or until the chicken reaches 165°F (75°C) and the sweet potatoes are tender.
Notes
Make-ahead: Prepare the marinade the night before and marinate the chicken for deeper flavor. Can swap sweet potatoes for regular potatoes or butternut squash.
