Description

A comforting one-pan meal featuring smoky sausage, sweet potatoes, and broccoli, coated in a delicious honey garlic sauce.


Ingredients

  • 14 ounces smoked sausage, sliced into ½-inch rounds
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce (use tamari for a gluten-free option)
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper. Spread them on the prepared baking sheet.
  3. Roast the sweet potatoes for 15 minutes to give them a head start on cooking.
  4. Prepare the honey garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan. Bring to a simmer over medium heat.
  5. Whisk in the cornstarch slurry and cook for 1-2 minutes until slightly thickened. Remove from heat.
  6. Add the sliced sausage and broccoli florets to the pan. Drizzle half of the honey garlic sauce over everything and toss gently.
  7. Return the pan to the oven and roast for another 15-20 minutes, until sweet potatoes are fork-tender and broccoli is crisp-tender.
  8. Drizzle the remaining sauce over the top, toss one last time, and serve immediately.

Feel free to swap out sausage or veggies as needed; leftovers can be stored for up to 3 days.
