Description

A heartwarming seafood stew packed with shrimp, cod, mussels, and clams in a rich tomato broth.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound cod, cut into chunks
  • 1 pound mussels, cleaned
  • 1 pound clams, cleaned
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups fish stock or broth
  • 1 cup vegetable juice
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until onion is translucent and fragrant.
  2. Stir in crushed tomatoes, fish stock, vegetable juice, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
  3. Add shrimp, cod, mussels, and clams to the pot. Cover and cook for about 5-7 minutes, or until seafood is cooked through.
  4. Garnish with fresh parsley and serve hot, with crusty bread.

Notes

This cioppino can be made ahead of time; just add seafood before serving. You can use frozen seafood if fresh isn’t available.
