- 1 pound shrimp, peeled and deveined
- 1 pound cod, cut into chunks
- 1 pound mussels, cleaned
- 1 pound clams, cleaned
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups fish stock or broth
- 1 cup vegetable juice
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until onion is translucent and fragrant.
- Stir in crushed tomatoes, fish stock, vegetable juice, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
- Add shrimp, cod, mussels, and clams to the pot. Cover and cook for about 5-7 minutes, or until seafood is cooked through.
- Garnish with fresh parsley and serve hot, with crusty bread.
Notes
This cioppino can be made ahead of time; just add seafood before serving. You can use frozen seafood if fresh isn’t available.
