Description

Ingredients

  • 4 pieces Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemons (juice)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Crumbled Feta Cheese
  • 2 tablespoons Fresh Parsley (for garnish)

Instructions

  1. Begin by marinating the chicken. In a medium bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, salt, and pepper.
  2. Add the chicken breasts to the bowl, ensuring they are well-coated in the marinade. Cover the bowl and let it sit in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat your oven to 400°F (200°C).
  4. In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the marinated chicken breasts, searing them for about 3-4 minutes on each side until they are golden.
  5. After searing, sprinkle the crumbled feta cheese generously on top of the chicken. Optionally, add some lemon slices for extra flavor.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until cooked through and the internal temperature reaches 165°F (75°C).
  7. Once done, remove the skillet from the oven and allow it to rest for a few minutes.
  8. Garnish with freshly chopped parsley before serving.

Notes

Marinate the chicken the night before for deeper flavors. Leftovers can be stored in an airtight container for up to 3 days.
