- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Lemons (juice)
- 3 cloves Garlic (minced)
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Crumbled Feta Cheese
- 2 tablespoons Fresh Parsley (for garnish)
Instructions
- Begin by marinating the chicken. In a medium bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, salt, and pepper.
- Add the chicken breasts to the bowl, ensuring they are well-coated in the marinade. Cover the bowl and let it sit in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the marinated chicken breasts, searing them for about 3-4 minutes on each side until they are golden.
- After searing, sprinkle the crumbled feta cheese generously on top of the chicken. Optionally, add some lemon slices for extra flavor.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until cooked through and the internal temperature reaches 165°F (75°C).
- Once done, remove the skillet from the oven and allow it to rest for a few minutes.
- Garnish with freshly chopped parsley before serving.
Notes
Marinate the chicken the night before for deeper flavors. Leftovers can be stored in an airtight container for up to 3 days.
