Description

A cozy comfort in a bowl, filled with tender turkey, fragrant herbs, and a medley of vegetables.


Ingredients

  • 2 cups cooked turkey, shredded
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken or turkey broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • 1 cup corn (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery, and sauté until tender, about 5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Pour in the broth and bring to a boil.
  5. Add the shredded turkey, thyme, rosemary, salt, and pepper.
  6. Reduce the heat and simmer for 20 minutes.
  7. Stir in the peas and corn (if using) and cook for an additional 5 minutes.
  8. Finish with a squeeze of lemon juice and serve warm.

Notes

This soup can be made ahead and stores well in the fridge or freezer. Use any leftover vegetables or proteins you have on hand for customization.
