- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/4 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups whipped topping
- 1 package instant lemon pudding mix
- 2 cups milk
- 1/2 cup lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the flour, butter, and 1/4 cup powdered sugar until the mixture resembles crumbs. Press this into the bottom of a 9×13 inch pan, forming a beautiful crust.
- Bake in the preheated oven for 15 minutes, or until lightly golden brown. Let it cool completely.
- Beat the softened cream cheese and 1 cup of powdered sugar together until smooth and creamy. Fold in 1 cup of whipped topping until well combined and spread this layer over your cooled crust.
- Whisk together the lemon pudding mix and milk until thickened. Add the lemon juice, mixing well to combine. Spread this mixture over the cream cheese layer.
- Top off with the remaining whipped topping, spreading it evenly for a lovely finish.
- Refrigerate for at least 4 hours or ideally overnight before serving.
Notes
Best made a day in advance for enhanced flavors. Store leftovers covered in the refrigerator for up to 3-4 days.
