Description

A creamy, refreshing lemon dessert that brings sunshine to every gathering.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups whipped topping
  • 1 package instant lemon pudding mix
  • 2 cups milk
  • 1/2 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, butter, and 1/4 cup powdered sugar until the mixture resembles crumbs. Press this into the bottom of a 9×13 inch pan, forming a beautiful crust.
  3. Bake in the preheated oven for 15 minutes, or until lightly golden brown. Let it cool completely.
  4. Beat the softened cream cheese and 1 cup of powdered sugar together until smooth and creamy. Fold in 1 cup of whipped topping until well combined and spread this layer over your cooled crust.
  5. Whisk together the lemon pudding mix and milk until thickened. Add the lemon juice, mixing well to combine. Spread this mixture over the cream cheese layer.
  6. Top off with the remaining whipped topping, spreading it evenly for a lovely finish.
  7. Refrigerate for at least 4 hours or ideally overnight before serving.

Notes

Best made a day in advance for enhanced flavors. Store leftovers covered in the refrigerator for up to 3-4 days.
