Description

Warm and cozy Loaded Southwest Potato Bowls packed with roasted potatoes, spiced ground beef, and vibrant salsa, perfect for a comforting meal on busy weeknights.


Ingredients

  • 4 medium-sized potatoes, diced
  • 1 pound ground beef
  • 1 cup salsa
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Dice the potatoes into bite-sized pieces and toss them in olive oil, salt, and pepper until well-coated. Spread them out evenly on a baking sheet and roast for 20-25 minutes until golden and tender.
  3. Heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat, then add chili powder, cumin, garlic powder, and stir until well-seasoned.
  4. Add roasted potatoes to serving bowls, followed by the seasoned ground beef.
  5. Top each bowl with fresh salsa, corn, cheese, and slices of avocado. Serve warm!
