- 4 medium-sized potatoes, diced
- 1 pound ground beef
- 1 cup salsa
- 1 cup corn
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Dice the potatoes into bite-sized pieces and toss them in olive oil, salt, and pepper until well-coated. Spread them out evenly on a baking sheet and roast for 20-25 minutes until golden and tender.
- Heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat, then add chili powder, cumin, garlic powder, and stir until well-seasoned.
- Add roasted potatoes to serving bowls, followed by the seasoned ground beef.
- Top each bowl with fresh salsa, corn, cheese, and slices of avocado. Serve warm!
