- Mini sweet peppers
- 1 lb ground beef
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the mini peppers in half lengthwise and remove the seeds.
- In a skillet, heat a splash of olive oil over medium heat.
- Add the chopped onion and minced garlic, cooking until softened.
- Add the ground beef, cooking until browned; season with salt and pepper.
- Stuff each pepper half with the beef mixture and place them snugly in a baking dish.
- Top with the shredded cheddar cheese.
- Bake in the preheated oven for about 20 minutes, until the cheese is melty and bubbly.
