Ingredients

  • Mini sweet peppers
  • 1 lb ground beef
  • 1 cup cheddar cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the mini peppers in half lengthwise and remove the seeds.
  3. In a skillet, heat a splash of olive oil over medium heat.
  4. Add the chopped onion and minced garlic, cooking until softened.
  5. Add the ground beef, cooking until browned; season with salt and pepper.
  6. Stuff each pepper half with the beef mixture and place them snugly in a baking dish.
  7. Top with the shredded cheddar cheese.
  8. Bake in the preheated oven for about 20 minutes, until the cheese is melty and bubbly.
