Description

A vibrant and colorful Mediterranean Chickpea Salad that is quick to prepare, no-bake, and packed with flavor.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, feta cheese, red onion, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine until everything is well coated.
  4. Serve immediately or refrigerate for 30 minutes to let the flavors meld together.

Notes
