Description

Cozy and cheesy Mediterranean quesadillas filled with spinach, feta, and mozzarella, perfect for a quick meal.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper in a mixing bowl.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla.
  3. Fold it over gently, embracing the filling.
  4. Heat a non-stick skillet over medium heat and add the olive oil.
  5. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
  6. Flip carefully and cook for another 3-4 minutes until both sides are crispy.
  7. Remove from heat, slice into wedges, and serve warm.
