Description

Ingredients

  • 2 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium red onion, chopped
  • 4 large tortillas
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a pan over medium heat. The scent will already start to lift your spirits!
  2. Add the chopped red onion and sauté until it becomes translucent. The kitchen is about to smell so inviting.
  3. Toss in the fresh spinach and cook until wilted. The vibrant green adds such a lively touch.
  4. Remove the mixture from the heat and gently fold in the crumbled feta and shredded mozzarella. Wait until you see how the cheeses meld together!
  5. Place a generous amount of the mixture on one half of each tortilla. Fold over the tortilla like a little pocket of joy.
