Description

A comforting and hearty breakfast featuring tender potatoes, fluffy eggs, and savory turkey bacon, all slow-cooked to perfection.


Ingredients

  • 6 large eggs
  • 2 cups diced potatoes, frozen or fresh
  • 1 cup cooked turkey bacon, chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 bell pepper, diced (red or green)
  • 1 small onion, diced
  • Salt and pepper to taste
  • A splash of milk or cream (optional)

Instructions

  1. Grease the crock pot with a little oil or non-stick spray.
  2. Whisk together the eggs with a splash of milk or cream and season with salt and pepper.
  3. Add the diced potatoes to the crock pot, followed by the turkey bacon, cheese, bell pepper, and onion. Mix everything well.
  4. Pour the egg mixture over the top.
  5. Cover and cook on low for 360 minutes or high for 240 minutes.
  6. Fluff it up with a fork, serve hot, and enjoy!

Notes

This recipe can be prepared the night before and stored in the refrigerator until ready to cook. Great for busy mornings!
