- 6 large eggs
- 2 cups diced potatoes, frozen or fresh
- 1 cup cooked turkey bacon, chopped
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 bell pepper, diced (red or green)
- 1 small onion, diced
- Salt and pepper to taste
- A splash of milk or cream (optional)
Instructions
- Grease the crock pot with a little oil or non-stick spray.
- Whisk together the eggs with a splash of milk or cream and season with salt and pepper.
- Add the diced potatoes to the crock pot, followed by the turkey bacon, cheese, bell pepper, and onion. Mix everything well.
- Pour the egg mixture over the top.
- Cover and cook on low for 360 minutes or high for 240 minutes.
- Fluff it up with a fork, serve hot, and enjoy!
