- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 8 ounces semi-sweet chocolate, chopped
- 1 cup heavy cream (for ganache)
Instructions
- Mix the graham cracker crumbs and melted butter until well combined. Press into a 9-inch pie pan to form the crust.
- Beat together the creamy peanut butter and powdered sugar until smooth.
- Whip 1 cup of heavy cream with the vanilla extract until soft peaks form. Gently fold into the peanut butter mixture.
- Spread the mousse over the prepared crust.
- Heat 1 cup of heavy cream until just simmering; pour over the chopped chocolate and let sit.
- Stir until smooth and creamy. Pour the ganache over the mousse layer.
- Refrigerate for at least 240 minutes or until set.
- Serve chilled, slice generously, and enjoy!
