Soft, chewy Oatmeal Protein Cookies that are perfect for a midday snack or a post-workout treat, made in just one bowl.
Ingredients

- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup almond butter (or any nut butter)
- 1/4 cup honey or maple syrup
- 1/4 cup dark chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix together the rolled oats, protein powder, and cinnamon until well combined.
- Combine the almond butter, honey (or maple syrup), vanilla extract, and salt in another bowl.
- Stir the wet and dry ingredients until well mixed and gently fold in dark chocolate chips if using.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes, or until the edges turn golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For uniform cookies, use a cookie scoop. Dough can be made ahead and stored in the refrigerator for up to 2 days.
