Description

A creamy and comforting one-pot meal that’s quick to prepare and loved by the whole family.


Ingredients

  • 1 pound chicken pieces (breast or thighs)
  • 1 cup white rice
  • 1 can (10 oz) Rotel tomatoes (diced with green chilies)
  • 1 can (15 oz) nacho cheese sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Water (as directed by rice package)

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Cook the chicken pieces until browned, about 5-7 minutes.
  2. Add the white rice to the pot, stirring well to combine with the chicken.
  3. Pour in the Rotel tomatoes and nacho cheese sauce, along with the garlic powder, salt, and pepper. Stir until well-mixed.
  4. Add water according to the rice package instructions, typically about 2 cups, and bring to a boil.
  5. Once boiling, reduce heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is fluffy and chicken is tender.
  6. Fluff with a fork and serve hot. Optional: sprinkle fresh cilantro on top.
