A creamy and delightful ice cream featuring fresh peach pieces, perfect for summer days.
Ingredients

- 500 g ripe peaches, chopped
- 100 ml cane sugar syrup
- 1 tablespoon lime juice
- 400 g heavy cream
- 3 egg yolks
- 50 g sugar
Instructions
- Wash, pit, and chop the peaches into small cubes.
- Combine the cane sugar syrup, lime juice, and 3 tablespoons of peach cubes in a saucepan. Heat gently for 2 minutes.
- Remove the peaches and let them cool on the side.
- Add the remaining peach cubes to the syrup and bring to a boil for 2–3 minutes.
- Puree the mixture until smooth, then let it cool in the fridge for 30 minutes.
- Heat the heavy cream in a separate pot until steaming.
- Whisk the egg yolks with the sugar until smooth and creamy.
- Gradually add the hot cream to the egg mixture, stirring constantly.
- Return the mixture to the saucepan and whisk over a double boiler until creamy.
- Cool the mixture in an ice-water bath.
- Mix in the peach puree and chill for another 30 minutes.
- Pour the mixture into an ice cream maker and churn for 45–60 minutes, adding the cooled peach cubes while churning.
- Serve immediately for soft serve or freeze until firm for a classic scoop.
Notes
Use ripe peaches for the best flavor. Store ice cream in an airtight container to prevent ice crystals.
