- 3 tablespoons cornstarch
- 3/4 cup all-purpose flour
- 1/4 cup large flake oats (quick oats or old-fashioned oats)
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/3 cup unsalted butter, melted
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 4–5 tablespoons cream (or milk)
Instructions
- Preheat the oven to 350°F. Line an 8×8 inch pan with parchment paper, leaving an overhang around the edges.
- Make the Shortbread Base: In a medium bowl, whisk together 1 1/4 cups of flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt. Stir in 2/3 cup of melted butter until well combined.
- Press the mixture into the bottom of the pan and bake for 15 minutes until starting to turn golden.
- Prepare the peach layer: Toss 3 cups of chopped peaches with 1/4 cup granulated sugar, 2 tablespoons lemon juice, and 3 tablespoons cornstarch.
- Make the Crumble Topping: In a medium bowl, stir together 3/4 cup flour, 1/4 cup oats, and 1/3 cup brown sugar. Stir in 1/3 cup melted butter.
- Spread the peach mixture evenly over the baked shortbread base. Crumble the oatmeal topping over the peach layer.
- Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and the filling is bubbling.
- Cool fully in the pan.
- Whisk together 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and enough cream to reach desired consistency for the glaze. Drizzle over the cooled bars.
Notes
You can prepare the shortbread base and filling the night before for easy assembly. Store leftovers in an airtight container in the refrigerator for up to 4 days.
