- 1 cup fresh peaches, diced
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 tablespoon honey
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix together the flour, sugar, baking powder, and salt in a large bowl until well combined.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Fold in the diced peaches, allowing their sweetness to mingle with the flour mixture.
- Whisk together the heavy cream and vanilla extract in a separate bowl until combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined—don’t overmix!
- Turn the dough out onto a floured surface and knead gently just until it holds together.
- Pat the dough into a circle about 1 inch thick and cut into wedges, just like cutting a pie!
- Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until they’re golden brown.
- Mix powdered sugar, honey, and a splash of water for the glaze and drizzle over the warm scones.
