- 1 cup butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups Rice Krispies cereal
- 1 cup semi-sweet chocolate chips
- 1/2 cup sweetened coconut (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking soda, and salt; gradually add to the creamed mixture until combined.
- Stir in the Rice Krispies, chocolate chips, and coconut if using.
- Drop by rounded tablespoons onto ungreased cookie sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
