Description

Delightful cookies featuring a unique crunch from Rice Krispies and gooey chocolate chips, ideal for any season.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup sweetened coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking soda, and salt; gradually add to the creamed mixture until combined.
  5. Stir in the Rice Krispies, chocolate chips, and coconut if using.
  6. Drop by rounded tablespoons onto ungreased cookie sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow to cool on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
