- 2 cups water or vegetable broth
- 2 tablespoons olive oil
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced

Instructions
- Rinse the quinoa under cold water to remove its natural coating, which can taste bitter. In a saucepan, bring the quinoa and water or vegetable broth to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and tender.
- While the quinoa cooks, heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute, stirring constantly to avoid burning the garlic.
- Fluff the cooked quinoa with a fork and gently fold it into the skillet with the sautéed mushrooms and garlic. Season everything with salt and pepper to taste.
- Stir to combine and allow it to cook for another 2-3 minutes, letting all those flavors meld together beautifully.
- Serve warm, garnished with fresh parsley for an extra pop of color and flavor.
Notes
You can customize this recipe by adding olives, sun-dried tomatoes, or avocado. It stores well in the fridge for up to 3 days.
