Description

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 tablespoons olive oil
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the quinoa under cold water to remove its natural coating, which can taste bitter. In a saucepan, bring the quinoa and water or vegetable broth to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and tender.
  2. While the quinoa cooks, heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute, stirring constantly to avoid burning the garlic.
  4. Fluff the cooked quinoa with a fork and gently fold it into the skillet with the sautéed mushrooms and garlic. Season everything with salt and pepper to taste.
  5. Stir to combine and allow it to cook for another 2-3 minutes, letting all those flavors meld together beautifully.
  6. Serve warm, garnished with fresh parsley for an extra pop of color and flavor.

Notes

You can customize this recipe by adding olives, sun-dried tomatoes, or avocado. It stores well in the fridge for up to 3 days.
