Description

Enjoy these mouthwatering Slow Cooker Chicken Gyros, filled with succulent, tender chicken, fresh vegetables, and creamy tzatziki sauce, perfect for busy weeknights.


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 4 pita breads
  • 1 cup chopped vegetables (lettuce, tomatoes, cucumbers)
  • 1 cup tzatziki sauce

Instructions

  1. Mix together the olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper until combined.
  2. Add the chicken thighs to the bowl and coat them well with the marinade.
  3. Place the marinated chicken in your slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken into pieces using two forks.
  5. Warm the pita breads in a pan or microwave for a few seconds.
  6. Assemble your gyros by placing shredded chicken into the warm pita, topped with veggies and tzatziki sauce.
  7. Serve and enjoy!
