Description

A creamy and crunchy macaroni salad, perfect for summer gatherings and cozy weeknight dinners.


Ingredients

Scale
  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 cup peas (fresh or frozen)
  • Salt and pepper to taste
  • 1 tablespoon vinegar or lemon juice
  • Optional: chopped parsley for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions, then drain and rinse under cold water to cool.
  2. In a large bowl, combine the macaroni, mayonnaise, celery, red bell pepper, red onion, peas, vinegar or lemon juice, salt, and pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Taste and adjust seasoning if necessary.
  5. Cover and refrigerate for at least 1 hour before serving.
  6. Serve chilled, garnished with chopped parsley if desired.

Notes

This salad tastes even better the next day. Consider preparing it a day in advance!
