A creamy and crunchy macaroni salad, perfect for summer gatherings and cozy weeknight dinners.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 cup peas (fresh or frozen)
- Salt and pepper to taste
- 1 tablespoon vinegar or lemon juice
- Optional: chopped parsley for garnish
Instructions
- Cook the elbow macaroni according to package instructions, then drain and rinse under cold water to cool.
- In a large bowl, combine the macaroni, mayonnaise, celery, red bell pepper, red onion, peas, vinegar or lemon juice, salt, and pepper.
- Mix well until all ingredients are evenly coated.
- Taste and adjust seasoning if necessary.
- Cover and refrigerate for at least 1 hour before serving.
- Serve chilled, garnished with chopped parsley if desired.
Notes
This salad tastes even better the next day. Consider preparing it a day in advance!
