Delightful S’mores Cookie Bars that bring the nostalgia of campfire s’mores to your kitchen with an easy-to-make, one-bowl recipe.

- 1 cup Unsalted butter, softened
- 1 cup Brown sugar, packed
- 1/2 cup Granulated sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Graham cracker crumbs
- 1 cup Chocolate chips
- 1 cup Mini marshmallows
- To taste: Extra chocolate chips and marshmallows for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal later.
- Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the two large eggs and vanilla extract. Mix until combined.
- Combine the all-purpose flour, baking soda, and salt in a separate bowl, then gradually add it to the wet ingredients.
- Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows until evenly distributed.
- Spread the dough into the prepared baking pan and sprinkle extra chocolate chips and marshmallows on top. Bake for 25-30 minutes.
- Allow the bars to cool for about 10-15 minutes before cutting into squares and enjoying.
Notes
You can prepare the dough ahead of time and refrigerate it. Store leftovers in an airtight container for up to a week.
