Description

Delightful S’mores Cookie Bars that bring the nostalgia of campfire s’mores to your kitchen with an easy-to-make, one-bowl recipe.


Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • To taste: Extra chocolate chips and marshmallows for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the two large eggs and vanilla extract. Mix until combined.
  4. Combine the all-purpose flour, baking soda, and salt in a separate bowl, then gradually add it to the wet ingredients.
  5. Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows until evenly distributed.
  6. Spread the dough into the prepared baking pan and sprinkle extra chocolate chips and marshmallows on top. Bake for 25-30 minutes.
  7. Allow the bars to cool for about 10-15 minutes before cutting into squares and enjoying.

Notes

You can prepare the dough ahead of time and refrigerate it. Store leftovers in an airtight container for up to a week.
