Deliciously warm apple fritters made with sourdough discard, perfect for cozy autumn days.
Ingredients

- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 apple, peeled and diced
- 1 egg
- 1/4 cup milk
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a bowl, combine the sourdough discard, flour, baking powder, cinnamon, nutmeg, salt, and sugar. Mix until well blended.
- In another bowl, whisk together the egg and milk until smooth.
- Combine the wet mixture with the dry ingredients and stir until just combined. Fold in the diced apples.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove from oil and let drain on paper towels.
- Dust with powdered sugar before serving.
Notes
Make ahead for convenience and choose firm, tart apples for best results.
