Ingredients

- 2 cups long-grain rice
- 1 can diced tomatoes (14.5 oz)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 2 cups chicken or vegetable broth
- 1 tsp paprika
- 1 tsp cumin
- Salt to taste
- Pepper to taste
- Fresh cilantro (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat a small amount of oil in a large skillet over medium heat and sauté the onion until translucent, about 3-4 minutes.
- Add the garlic and cook for an additional minute.
- Stir in the diced tomatoes, rinsed rice, broth, paprika, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover the skillet and let it simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice gently with a fork and garnish with fresh cilantro before serving.
Notes
This dish can be made ahead and stored for up to 3 days. Customize with proteins or vegetables to suit your taste.
