Description

A cozy, comforting dish of Spinach Rice that combines wholesome rice, vibrant spinach, and aromatic flavors, perfect for any night.


Ingredients

Scale
  • 2 cups of white rice
  • 4 cups of water or vegetable broth
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cups of fresh spinach, chopped
  • 23 cloves of garlic, minced
  • Salt and pepper to taste
  • Juice of 1 lemon (optional)
  • Feta cheese for topping (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic and cook for another minute.
  3. Add the rice to the pot and stir to coat it.
  4. Pour in the water or vegetable broth and bring to a bubbling boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until tender.
  6. Remove the pot from heat and fold in the chopped spinach until wilted.
  7. Season with salt, pepper, and lemon juice if using.
  8. Serve warm, topped with crumbles of feta cheese if desired.

Notes

Make-ahead advice: You can prepare the rice a day in advance and store it in the refrigerator. Reheat and stir in the spinach when ready to serve.
