Ingredients

- 2 cups of white rice
- 4 cups of water or vegetable broth
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 cups of fresh spinach, chopped
- 2–3 cloves of garlic, minced
- Salt and pepper to taste
- Juice of 1 lemon (optional)
- Feta cheese for topping (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the rice to the pot and stir to coat it.
- Pour in the water or vegetable broth and bring to a bubbling boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until tender.
- Remove the pot from heat and fold in the chopped spinach until wilted.
- Season with salt, pepper, and lemon juice if using.
- Serve warm, topped with crumbles of feta cheese if desired.
Notes
Make-ahead advice: You can prepare the rice a day in advance and store it in the refrigerator. Reheat and stir in the spinach when ready to serve.
