Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Cream together the sugar and softened butter until smooth and fluffy, then beat in the egg and vanilla extract.
- Combine the all-purpose flour, baking soda, and salt; gradually blend this dry mixture into your creamed mixture.
- Roll the dough into small balls (about 1 tablespoon each), pressing down to form a cup shape in the muffin tin.
- Bake in the preheated oven for 10-12 minutes or until golden brown, then cool in the pan for a few minutes before transferring to a wire rack.
- Prepare the cheesecake filling by beating the cream cheese until smooth, then gradually add the powdered sugar.
- Stir in the chopped strawberries and lemon juice.
- Spoon the cheesecake mixture into each cooled cookie cup.
- Top with whipped cream and additional strawberries if desired.
