Description

Delicious cookie cups with a creamy cheesecake center and fresh strawberries.


Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup strawberries, chopped
  • 1/2 teaspoon lemon juice
  • Whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Cream together the sugar and softened butter until smooth and fluffy, then beat in the egg and vanilla extract.
  3. Combine the all-purpose flour, baking soda, and salt; gradually blend this dry mixture into your creamed mixture.
  4. Roll the dough into small balls (about 1 tablespoon each), pressing down to form a cup shape in the muffin tin.
  5. Bake in the preheated oven for 10-12 minutes or until golden brown, then cool in the pan for a few minutes before transferring to a wire rack.
  6. Prepare the cheesecake filling by beating the cream cheese until smooth, then gradually add the powdered sugar.
  7. Stir in the chopped strawberries and lemon juice.
  8. Spoon the cheesecake mixture into each cooled cookie cup.
  9. Top with whipped cream and additional strawberries if desired.
