Description

A delightful Strawberry Earthquake Cake that combines the richness of chocolate with a creamy, fruity surprise, perfect for any occasion.


Ingredients

  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup chopped strawberries
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well blended and smooth.
  3. Pour half of the cake batter into the prepared baking dish, spreading it evenly.
  4. In another bowl, beat the softened cream cheese until creamy and smooth. Gradually add in the powdered sugar, mixing until fully combined.
  5. Gently fold the chopped strawberries into the cream cheese mixture, creating a luscious, fruity center.
  6. Spoon the cream cheese mixture over the first layer of cake batter, making sure to spread it evenly. Then, pour the remaining cake batter on top.
  7. Sprinkle shredded coconut and chopped nuts over the cake for added texture and flavor (if using).
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool completely before serving. To make it extra special, serve with whipped cream if desired.

Notes

You can prepare the cream cheese mixture a day in advance and store it in the fridge. Store leftovers in an airtight container for up to 3 days.
