- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup chopped strawberries
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup shredded coconut
- 1/2 cup chopped nuts (optional)
- Whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well blended and smooth.
- Pour half of the cake batter into the prepared baking dish, spreading it evenly.
- In another bowl, beat the softened cream cheese until creamy and smooth. Gradually add in the powdered sugar, mixing until fully combined.
- Gently fold the chopped strawberries into the cream cheese mixture, creating a luscious, fruity center.
- Spoon the cream cheese mixture over the first layer of cake batter, making sure to spread it evenly. Then, pour the remaining cake batter on top.
- Sprinkle shredded coconut and chopped nuts over the cake for added texture and flavor (if using).
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before serving. To make it extra special, serve with whipped cream if desired.
Notes
You can prepare the cream cheese mixture a day in advance and store it in the fridge. Store leftovers in an airtight container for up to 3 days.
