- 1 medium red onion, halved and sliced root to stem

- 1 avocado, diced
- 100 g soft goat cheese, crumbled
- Small handful fresh basil (chopped, optional)
- 1 cup pecans (raw or toasted, optional)
- ¼ cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard (optional)
- ¼ tsp fine sea salt
- ¼ tsp black pepper
- ¼ tsp chili flakes (or more to taste)
Instructions
- Prepare the greens: In a large salad bowl, combine the arugula, creating a vibrant base for your salad.
- Add the berries: Gently fold in the chopped strawberries, letting their ruby-red color shine throughout the greens.
- Veggie medley: Add in the sliced red onion and diced cucumber.
- Add the avocado: Gently add the diced avocado for that creamy richness.
- Sprinkle the crumbled goat cheese generously over the top.
- Top with basil and nuts: If using, sprinkle the fresh basil and pecans over the salad.
- Create the dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, maple syrup, Dijon mustard, fine sea salt, black pepper, and chili flakes.
- Dress the salad: Drizzle the dressing over the salad just before serving and gently toss.
