Description

A refreshing salad combining the peppery notes of arugula, juicy strawberries, and creamy goat cheese, perfect for summer picnics and gatherings.


Ingredients

  • 2 cups chopped strawberries
  • 1 medium red onion, halved and sliced root to stem
  • ½ large cucumber, diced
  • 1 avocado, diced
  • 100 g soft goat cheese, crumbled
  • Small handful fresh basil (chopped, optional)
  • 1 cup pecans (raw or toasted, optional)
  • ¼ cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard (optional)
  • ¼ tsp fine sea salt
  • ¼ tsp black pepper
  • ¼ tsp chili flakes (or more to taste)

Instructions

  1. Prepare the greens: In a large salad bowl, combine the arugula, creating a vibrant base for your salad.
  2. Add the berries: Gently fold in the chopped strawberries, letting their ruby-red color shine throughout the greens.
  3. Veggie medley: Add in the sliced red onion and diced cucumber.
  4. Add the avocado: Gently add the diced avocado for that creamy richness.
  5. Sprinkle the crumbled goat cheese generously over the top.
  6. Top with basil and nuts: If using, sprinkle the fresh basil and pecans over the salad.
  7. Create the dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, maple syrup, Dijon mustard, fine sea salt, black pepper, and chili flakes.
  8. Dress the salad: Drizzle the dressing over the salad just before serving and gently toss.
