Description

Ingredients

  • 1 lb chicken thighs
  • 2 cups corn (fresh, frozen, or canned)
  • 2 cups cooked rice
  • 1/2 cup sour cream
  • 1 lime (juiced)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Season the chicken thighs with smoked paprika, garlic powder, salt, and pepper.
  2. Cook the chicken thighs in a skillet over medium heat until fully cooked and golden brown, about 6–7 minutes per side.
  3. Char the corn in the same skillet until it gets a lovely golden color.
  4. Make the creamy sauce by mixing sour cream and lime juice in a bowl.
  5. Assemble the bowl with a base of cooked rice, sliced chicken, charred corn, and drizzle with the creamy lime sauce.
  6. Garnish with chopped cilantro and serve warm.

Notes

Marinate the chicken the night before for deeper flavors. Store leftovers in an airtight container in the refrigerator for up to 3 days.
