Instructions
- Season the chicken thighs with smoked paprika, garlic powder, salt, and pepper.
- Cook the chicken thighs in a skillet over medium heat until fully cooked and golden brown, about 6–7 minutes per side.
- Char the corn in the same skillet until it gets a lovely golden color.
- Make the creamy sauce by mixing sour cream and lime juice in a bowl.
- Assemble the bowl with a base of cooked rice, sliced chicken, charred corn, and drizzle with the creamy lime sauce.
- Garnish with chopped cilantro and serve warm.
