A refreshing and creamy salad packed with flavor, perfect for summer gatherings.
Ingredients

- 2 cups grilled or roasted chicken, diced
- 1 cup sweet corn (grilled or canned)
- 1 large cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- Optional: crumbled feta cheese for garnish
Instructions
- Prepare the chicken: Grill or roast the chicken until golden and tender. Cool slightly and dice.
- Warming up the corn: Drain canned corn or grill corn until charred. Cool down.
- Chop the veggies: Dice the cucumber and finely chop the red onion.
- Make the dressing: In a bowl, combine mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and pepper. Whisk until creamy.
- Combine all ingredients: Add chicken, corn, cucumber, and onion to the bowl with dressing and gently fold until coated.
- Garnish & serve: Optionally sprinkle feta cheese on top and serve immediately, or chill for 30 minutes.
Notes
This salad can be made a day in advance and keeps well in the fridge for up to 3-4 days.
