Description

A refreshing and creamy salad packed with flavor, perfect for summer gatherings.


Ingredients

Scale
  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn (grilled or canned)
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare the chicken: Grill or roast the chicken until golden and tender. Cool slightly and dice.
  2. Warming up the corn: Drain canned corn or grill corn until charred. Cool down.
  3. Chop the veggies: Dice the cucumber and finely chop the red onion.
  4. Make the dressing: In a bowl, combine mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and pepper. Whisk until creamy.
  5. Combine all ingredients: Add chicken, corn, cucumber, and onion to the bowl with dressing and gently fold until coated.
  6. Garnish & serve: Optionally sprinkle feta cheese on top and serve immediately, or chill for 30 minutes.

Notes

This salad can be made a day in advance and keeps well in the fridge for up to 3-4 days.
