Description

A creamy cheesecake topped with fresh summer berries and peaches, perfect for gatherings or a cozy night in.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until moistened. Press into the bottom of the pan.
  3. Beat the cream cheese until smooth and creamy.
  4. Add 1 cup of sugar and vanilla, beating until fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the sour cream until blended.
  7. Pour the batter over the crust and arrangement the peach slices and berries on top.
  8. Bake for 50-60 minutes until the center is set.
  9. Cool on a wire rack then refrigerate for at least 4 hours before serving.

Notes

Use room temperature ingredients for best results. Leftovers can be stored in an airtight container for up to five days.
