Description

A refreshing and crowd-pleasing salad featuring sweet watermelon, peppery arugula, fragrant basil, and creamy feta, perfect for summer gatherings.


Ingredients

  • 68 cups watermelon, cubed
  • 2 cups arugula
  • 1 heaping cup fresh basil, chopped
  • 2/3 cup feta cheese, or more as desired
  • 1/2 large red onion, thinly sliced
  • 1/4 cup pine nuts
  • Flaky sea salt and freshly cracked black pepper
  • 1/4 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. lemon juice, freshly squeezed
  • 12 Tbsp. honey
  • 1 Tbsp. Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Combine the watermelon, arugula, basil, feta cheese, red onion, and pine nuts in a large bowl.
  2. Toss the ingredients gently so that they intermingle beautifully.
  3. Whisk together the olive oil, red wine vinegar, lemon juice, honey, Dijon mustard, salt, and pepper in a separate small bowl until smooth.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Taste and adjust seasoning with flaky sea salt and cracked pepper as needed.
  6. Serve immediately as a refreshing side dish.

Notes

For a fruity twist, add peaches or strawberries. For creaminess, toss in avocado. For a zesty kick, add jalapeño slices.
