Ingredients

  • 2 slices of bread (your choice)
  • 1 cooked chicken breast, sliced
  • 2 ounces of brie cheese, sliced
  • 2 tablespoons of apricot jam
  • Lettuce or greens of choice
  • Salt and pepper to taste
  • Butter (for grilling, optional)

Instructions

  1. Spread apricot jam generously on one side of each slice of bread.
  2. Layer the sliced chicken breast atop the jam on one slice.
  3. Follow this with the creamy brie cheese, letting it blanket the chicken.
  4. Add a handful of greens, seasoning with salt and pepper to taste.
  5. Place the other slice of bread jam side down over the layers.
  6. Butter the outside of the sandwich if desired.
  7. Heat a skillet over medium heat and grill the sandwich for 3-5 minutes per side until golden brown and cheese is melted.
