- Prepare vegetables: Start by dicing your onions and bell peppers, and mincing that fragrant garlic. Chop the cabbage into bite-sized pieces – the smaller, the better for even cooking.
- Sauté the aromatics: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the onions and garlic and sauté for 3-4 minutes until they’re golden and fragrant. Toss in the diced bell pepper and cook until it softens. Remove this colorful medley from the pan and set aside.
- Brown the beef: In the same pan, add the ground beef. Cook it until browned, breaking it up as it cooks to ensure it’s crumbly and tender.
- Season and combine: Sprinkle in the onion powder, oregano, and smoked or sweet paprika. Stir in the diced tomatoes, along with a sprinkle of salt and pepper. Mix well to let those robust flavors meld together.
- Cook the cabbage: Fold in the chopped cabbage. Cover the pan and cook on medium heat for 10 minutes. Stirring occasionally, continue to cook for another 15 minutes until the cabbage is wilted and tender.
