Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter in a bowl until combined. Press this mixture into the bottom of a 9-inch springform pan.
  3. Beat the cream cheese in a large bowl until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, beating well after each addition to ensure a silky texture.
  5. Stir in the sour cream until fully incorporated.
  6. Pour the cream cheese mixture over the crust in the springform pan, smoothing the top with a spatula.
  7. Bake for about 60 minutes, or until the edges are set but the center is still slightly jiggly.
  8. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour.
  9. Remove from the oven and let cool to room temperature.
  10. Refrigerate for at least 4 hours or overnight before serving.
