- 1 cup watermelon juice
- 1/4 cup sugar
- Cornstarch for dusting
- Optional: food coloring (green or pink)
Instructions
- Combine the glutinous rice flour and sugar in a mixing bowl.
- Add the watermelon juice to the flour mixture, mixing until smooth.
- Pour the mixture into a microwave-safe dish.
- Microwave on high for 1 minute, then stir gently.
- Continue microwaving for another minute and stir again.
- Keep microwaving in 30-second intervals until sticky and translucent.
- Allow the mixture to cool slightly, dust hands and surface with cornstarch.
- Shape portions of the mochi into balls or discs.
- Dust with more cornstarch to prevent sticking.
- Serve immediately or refrigerate for later enjoyment.
Notes
These mochi are best enjoyed fresh but can be stored in the fridge for up to 3 days. Dust with cornstarch to prevent sticking.
