Description

A delightful no-bake dessert that combines the flavors of watermelon and chewy mochi for a refreshing summer treat.


Ingredients

Scale
  • 1 cup glutinous rice flour
  • 1 cup watermelon juice
  • 1/4 cup sugar
  • Cornstarch for dusting
  • Optional: food coloring (green or pink)

Instructions

  1. Combine the glutinous rice flour and sugar in a mixing bowl.
  2. Add the watermelon juice to the flour mixture, mixing until smooth.
  3. Pour the mixture into a microwave-safe dish.
  4. Microwave on high for 1 minute, then stir gently.
  5. Continue microwaving for another minute and stir again.
  6. Keep microwaving in 30-second intervals until sticky and translucent.
  7. Allow the mixture to cool slightly, dust hands and surface with cornstarch.
  8. Shape portions of the mochi into balls or discs.
  9. Dust with more cornstarch to prevent sticking.
  10. Serve immediately or refrigerate for later enjoyment.

Notes

These mochi are best enjoyed fresh but can be stored in the fridge for up to 3 days. Dust with cornstarch to prevent sticking.
