- 2 pounds zucchini, plus 1 teaspoon salt
- 1 large egg
- 1 large red onion, thinly sliced
- 2 cloves garlic, grated
- 1 teaspoon dried oregano (or dill)
- ¾ cup all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons extra virgin olive oil
- 4 ounces crumbled feta cheese (optional)
Instructions
- Grate the 2 pounds of zucchini and toss it with 1 teaspoon of salt in a colander. Let it sit for about 10 minutes to allow it to release excess water.
- Squeeze out as much moisture from the zucchini as possible using your hands or a clean kitchen towel.
- Make the batter by beating the large egg in a large mixing bowl. Add the squeezed zucchini, optional crumbled feta cheese, thinly sliced red onion, grated garlic, dried oregano, all-purpose flour, baking powder, salt, and black pepper. Mix until you have a thick batter.
- Cook the fritters by heating 2 tablespoons of olive oil in a skillet over medium-high heat. Drop spoonfuls of the batter into the pan and flatten them gently. Cook for about 3-4 minutes per side until golden and crispy.
- Serve the fritters immediately on a paper towel-lined plate to drain excess oil.
